Ingredients for Stir-Fried Beef: Lean beef, a piece; Sichuan peppercorns, a few; Red bell pepper, half; Green onions and ginger, an appropriate amount; Egg white, one; Cooking wine, one teaspoon; Sichuan pepper powder, one teaspoon; Light soy sauce/soy sauce, one teaspoon; White sugar, half a teaspoon; Salt, to taste; Dried red chili peppers, 2-3; White pepper, half a teaspoon.
Method for Stir-Fried Beef: Step 1: Prepare the ingredients. Step 2: Cut all ingredients and set aside. Step 3: Slice the beef thinly, add egg white, Sichuan pepper powder, white pepper, cooking wine, light soy sauce, and shredded green onions and ginger. Mix well and marinate for at least 15 minutes. Step 4: Heat oil in a pan, first fry green onions, ginger, and dried red chili peppers until fragrant.
(You can also add some Sichuan peppercorns; adjust the amount of chili peppers to your taste.) Step 5: Quickly stir-fry the beef slices over high heat. Step 6: After the beef slices change color, switch to medium heat and add green and red peppers, continue stir-frying for a minute or two. Step 7: Add Sichuan pepper powder and stir-fry for a short time, then season with salt and sugar before serving.
Step 8: Do not overcook the beef, as it can become tough. If you are a beginner, you can cook the beef until done, remove it from the pan, then stir-fry the peppers, and finally mix the beef back in to ensure even cooking.
Cooking Tips for Stir-Fried Beef: 1. Adding egg white when marinating the beef makes the slices tender; it is best not to omit this step. 2. Do not overcook the beef, as it can become tough. If you are a beginner, you can follow the method mentioned in step 8. 3. If you prefer softer peppers, you can also follow the method in tip 2. 4. For those who like spicy food, you can add some Thai bird’s eye chili peppers.
