Method for Braised Chicken Rice: Step 1: Soak dried shiitake mushrooms in hot water and reserve the mushroom water. Step 2: Marinate chicken leg meat with cooking wine and light soy sauce for 20 minutes. Step 3: Stir-fry ginger slices and red pepper flakes until fragrant, then add the marinated chicken and stir-fry for about 2 minutes before removing from heat. Step 4: Transfer to a casserole, add mushroom water, mushroom slices, light soy sauce, rock sugar, salt, cover and simmer for 15 minutes. Step 5: Add potatoes, onions, green peppers, enoki mushrooms, bean curd sheets, dried red chili peppers, and garlic cloves, and simmer for another 5 minutes.
