Method for Fried Fish Pieces:
Step 1: Clean the fresh fish thoroughly.
Step 2: Use the fish head for Spicy Fish Head and chop the fish body into pieces.
Step 3: Add cooking wine, white liquor, black pepper, five-spice powder, green onions, and ginger strips, marinate for half an hour.
Step 4: Combine starch and flour in a 1:1 ratio, with a pinch of five-spice powder.
Step 5: Coat the marinated fish with the flour mixture.
Step 6: Fry the fish in oil heated to medium temperature.
Step 7: Remove the fish when it is crispy and drain. Reheat the oil and fry the fish again. (Sprinkle with salt and pepper or a little cumin).
