Steamed Chicken with Soy Sauce Recipe

Ingredients for Steamed Chicken with Soy Sauce: 2 chicken drumsticks, appropriate amount of sesame oil, 1 gram of salt, 1 spring onion, appropriate amount of green onions, 8 cloves of garlic, 1 tablespoon of light soy sauce, 1 teaspoon of steamed fish soy sauce, 2 grams of white sugar, 8 Sichuan peppercorns, 2 bay leaves, 1 tablespoon of cooking wine.


Method:


Step 1: Clean the chicken drumsticks and coat them with salt both inside and out. Marinate for 20 minutes.


Step 2: Cut the spring onion into sections, slice the ginger, and flatten the garlic cloves. Prepare one dried chili pepper, 2 bay leaves, one star anise, and 8 Sichuan peppercorns. Also, prepare a large basin of ice water.


Step 3: Boil a large pot of water with spring onion sections, ginger slices, garlic cloves, and spices for 10 minutes.


Step 4: On high heat, place the marinated chicken drumsticks in the pot and blanch for 5 seconds.


Step 5: Quickly transfer the chicken into the ice water to cool down.


Step 6: Repeat the process of blanching the chicken in boiling water for 5 seconds and then cooling in ice water, three times in total.


Step 7: Place the chicken back in the pot, add the cooking wine, and bring to a boil. Cover and continue cooking for 10 minutes.


Step 8: Turn off the heat and let the chicken steep for half an hour.


Step 9: Finely chop the green onions and garlic.


Step 10: Prepare a small bowl with chopped green onions, garlic, light soy sauce, steamed fish soy sauce, a small amount of white sugar, and sesame oil to make a dipping sauce. For those who like spicy, add a spoonful of chili oil.


Step 11: Remove the chicken from the pot and soak in cold boiled water until completely cooled. Drain and pat dry, then apply sesame oil to the chicken skin.


Step 12: Chop the chicken into suitable pieces and arrange on a plate. Serve the dipping sauce alongside or pour over the chicken.
