Ingredients for Steamed Egg with Shrimp and Tofu:
1 block of soft tofu, 10 sea shrimp, 1 egg, 1 piece of ginger, 1 spring onion, 1 teaspoon of salt, 1 teaspoon of white pepper, 2 tablespoons of steamed fish soy sauce, 1 tablespoon of cooking wine.
Method:
Step 1: Cut the soft tofu into pieces and place in a deep dish.
Step 2: Prepare 10 sea shrimp, 1 egg, 1 piece of ginger, and 1 spring onion.
Step 3: Clean the spring onion and cut into rings for later use.
Step 4: Rinse the shrimp, remove the heads (save the heads for making shrimp oil), and peel the shells, removing the shrimp line with a toothpick.
Step 5: Keep the shrimp tails intact (as shown in the picture).
Step 6: After all shrimp are processed, put them in a bowl, add ginger shreds, 1 teaspoon of white pepper, 1 tablespoon of steamed fish soy sauce, and 1 tablespoon of cooking wine, mix well and marinate for 10 minutes.
Step 7: Crack the egg into a bowl, add water and beat evenly (1:1 ratio of egg to water).
Step 8: Sprinkle 1 teaspoon of salt evenly over the tofu.
Step 9: Use a fine sieve to pour the egg liquid into the dish, discarding any foam.
Step 10: Arrange the shrimp on top of the tofu.
Step 11: Cover with plastic wrap, bring water to a boil in a pot, place the dish on the steamer, cover with a lid, and steam over medium heat for 8 minutes, then turn off the heat and let it rest for 2 more minutes.
Step 12: After 10 minutes, a delicious and tender Steamed Egg with Shrimp and Tofu is ready.
Step 13: Sprinkle with chopped green onions, drizzle with 1 tablespoon of steamed fish soy sauce and 1 tablespoon of sesame oil.
Step 14: The dish is savory, rich, and delicious.
