Ingredients for Sweet and Sour Pork Ribs:
– Pork ribs, 1 jin
– Rock sugar, 40 grams
– Vinegar, 2 tablespoons
– Cooking wine, 1 tablespoon
– Vegetable oil, 2 tablespoons
– Dark soy sauce, 2 tablespoons
– Toasted white sesame seeds, to taste
Steps for Making Sweet and Sour Pork Ribs:
1. Prepare 1 jin of fresh pork ribs, cut into large pieces and clean thoroughly.
2. Boil in cold water, then remove and drain for later use.
3. 3 pieces of rock sugar equal 40 grams; adjust to taste, and break into small pieces.
4. Heat the pan and add 2 tablespoons of oil, then put in the rock sugar and stir-fry over low heat until it melts into a golden color; do not overcook as it may become bitter.
5. Quickly pour in the ribs and stir-fry to coat them evenly with the sugar color.
6. Add boiling water to cover the ribs, add more water if needed, and then add dark soy sauce, cooking wine, and vinegar; bring to a boil, cover, and simmer on medium-low heat for 20-30 minutes.
7. When some sauce remains, add a pinch of salt and thicken the sauce over high heat.
8. Serve and sprinkle with pre-toasted sesame seeds.
