Ingredients for Toon Sauce: Toon sprouts 150g, Soybean paste 150g, Sweet bean paste 80g, Mushrooms 150g, Grandma’s Village Small Press Rapeseed Oil 20g, Water approximately 30g.
Steps for making Toon Sauce:
Step 1: Prepare the ingredients.
Step 2: Remove the hard stems from the toon sprouts and chop them finely.
Step 3: Blanch the chopped toon sprouts in boiling water until they change color, then remove and drain, allowing them to cool naturally without rinsing in cold water.
Step 4: Pour Grandma’s Village Small Press Rapeseed Oil into a pan.
Step 5: Heat the oil until it reaches 50-60% heat, then add the diced mushrooms and stir-fry until they release their liquid.
Step 6: Pour in the soybean paste and sweet bean paste.
Step 7: Add a small amount of water and simmer over medium heat until the sauce thickens and slowly drips when lifted with a spatula, then turn off the heat and let it cool to hand temperature before serving.
Step 8: Pour the sauce over the toon sprouts without stirring, mix just before eating.
Step 9: The sauce is rich in aroma, salty with a hint of sweetness, and tender and delicious.
Step 10: It’s great with steamed buns, mixed with rice, or mixed with noodles.
Cooking tips for Toon Sauce: 1. Toon sprouts contain a large amount of nitrites, blanching them removes these, making them healthier to eat; 2. Toon sprouts should not be boiled for long, remove them once they change color, let them cool naturally, preferably covered to retain the aroma; mix after the sauce cools to retain the aroma as much as possible; 3. Any leftover Toon Sauce can be stored in a sealed container in the refrigerator, use a clean spoon to scoop out, and it can be preserved for a long time.
